This is the trademarked name for a modified tapioca food starch made by National Starch. Used in much the same way as xanthan gum, Ultra-Tex 3 has a bland taste, thickens in cold water, and preserves the taste and color of the original liquid. The finished product can be dried or frozen in a thin sheet.

Paper: Shear 3% ultra-tex 3 into liquid. Pour onto silpat and spread flat. Dry for 2-3 hours at 170F.
