This modified food starch was developed to increase the volume of dry mixes and frozen foods. But it also stabilizes high-fat ingredients, transforming them into powders. Since it dissolves in contact with moisture, the ingredients reconstitute in the mouth. Start with 60 percent fat to 40 percent tapioca maltodextrin, and puree in a food processor to form the powder. N Zorbit M is the trade name of a popular tapioca maltodextrin sold by National Starch.
